Vegetarian Chicken Wings With Seitan

Seitan is a meat substitute made from wheat Gluten. You can make your own seitan or buy a commercial product such as the product from West Soy. Making seitan is fun and rewarding but buying it is definitely quicker, cleaner, albeit more expensive.

Here is how I make seitan into vegetarian chicken wings:

Ingredients:

16 oz Seitan cut into cubes
1/2 cup flour - choose flour of choice
2 eggs
1 cup bread crumbs - I like panko
1/4 cup Bill's Best, Chiknish Seasoning
Salt
Pepper

This is an assembly line type of production. The assembly line is a series of bowls or plates which we will use to coat the seitan with flour, then egg, then bread crumbs and then place on a cookie sheet sprayed with non stick cooking spray.

Preheat an oven set to 450 degrees.

To begin set out one plate or bowl to the right with the flour, put the two eggs into a bowl and beat thoroughly  place just left of the flour. Next to the eggs  place a plate with the bread crumbs. On the left most end of the line place the cookie sheet.

Before we begin, split the Bill's Best into 2 1/8 cups and add 1/8 the bread crumbs and 1/8 to to the flour. Mix into each.

Starting with you right hand grab one cube of seitan and cot in the flour. Take to coated cube and dunk into the egg until completely coated. Still using your right hand drop the cube into the bread crumbs (you don;t want to get bread crumble on you right hand. Using your left hand grab some bread crumbs and cover the cube. Now roll it around a bit and using you left hand place it on the cookie sheet. Repeat until all the seitan is on the cookie sheet.

Bake the seitan on 450 for 15 minutes  When the cubes start to brown on the bottom turn them over and bake another 10 minutes. Take out of the oven and salt and pepper to taste.

If you are ready to eat take you favorite  Buffalo wing sauce and toss the cubes in it and then serve. To keep it healthy I like to serve with Wishbone Fat free Blue Cheese Dressing available here:

Fat Free Blue Cheese for Health Vegetarian Chicken Wing Snack


I love blue cheese dressing. I'll say it all over this blog. The trouble is that it makes a vegetarian chicken wing snack less healthy and certainly adds fat.

This blue cheese dressing from Wishbone is one of the few fat free blue dressings on the market. It is a bit hard to find so I buy it on amazon.

Check out the vegetarian chicken wing recipe posted on the PETA website. Truth be told they  can be a bit soggy and it is a little tricky to get these to crunch...without deep frying. But you definitely spice them up with your own buffalo sauce and  they go great with blue cheese. Also check out www.peta.org.

As a long time vegetarian there are numerous commonly cooked and ordered foods that I do not eat. For the vast majority I do not care. I do not want to eat meat or fish and I like it that way.

Chicken wings are an exception. I truly do not want to eat wings of any animal but the spicy fun of chicken wings together with a the cool carrots and celery with blue cheese are terrific. For a long time I have been experimenting with various ways to approximate the experience while keeping vegetarian.
